Healthy Chocolate Mousse with Raspberry Swirl (perfect for Valentine’s Day!)

 
 

This mousse is rich, velvety, and decadent but made with wholesome ingredients—perfect for a romantic and healthy Valentine’s Day dessert!

Ingredients:

  • 1 ripe avocado (this gives the mousse its creamy texture without heavy cream)

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup maple syrup or honey

  • 1 tsp vanilla extract

  • 1/4 cup unsweetened almond milk (or any plant-based milk)

  • Pinch of sea salt

  • 1/2 cup fresh raspberries (for the raspberry swirl)

  • Optional: dark chocolate shavings or cocoa nibs for garnish

Instructions:

  1. Make the mousse:

    • In a blender or food processor, combine the avocado, cocoa powder, maple syrup, vanilla extract, almond milk, and sea salt. Blend until smooth and creamy. You may need to scrape down the sides once or twice to ensure it's well blended.

  2. Prepare the raspberry swirl:

    • In a small bowl, mash the fresh raspberries with a fork until you get a chunky puree. If you want a smoother swirl, you can blend them briefly. Optionally, you can sweeten it with a little honey or maple syrup to taste.

  3. Assemble the mousse:

    • Spoon the mousse into serving cups or bowls, dividing it evenly. Then, drop small spoonfuls of the raspberry puree on top and use a skewer or a toothpick to gently swirl it into the mousse for a marbled effect.

  4. Chill and garnish:

    • Refrigerate the mousse for at least an hour to let the flavors set and the mousse firm up a bit.

    • Before serving, you can garnish with some dark chocolate shavings or cocoa nibs for an extra touch of elegance and flavor.
